This light-bodied, non-vintage sparkling wine displays a pale straw colour with green tints. Fresh citrus blossom, red apple, and pastry aromas lead to a palate of bright citrus and brioche flavors,  creating a playful and refreshing experience. Made primarily from Chardonnay (82%) with a touch of Pinot Noir (18%), this wine is handled gently to maintain its delicate freshness and does not undergo Malo-lactic fermentation, preserving its crisp acidity.

Bright ruby red, this sparkling Shiraz bursts with aromas of black cherry, chocolate, and a hint of coconut. The palate delivers rich dark cherry and chocolate flavors, reminiscent of a cherry ripe. Medium-bodied, it balances sweetness with juicy acidity and soft tannins, making for a lively and expressive wine. Produced from Shiraz, this wine showcases the true character of the varietal and the careful, minimal oak influence brings out a touch of milk chocolate.

This wine opens with ripe white peach, fig and stone fruits with accents of wild honey and native wild flowers. These are supported by fresh hay aromas and toasty vanilla complexities from wild fermentation and partial oak maturation. Full bodied with layers of flavour that build across the palate reflect not only the fruit but the use of wild fermentation, malolactic fermentation and ageing on yeast lees. With a full-bodied structure, it combines rich fruit concentration with a smooth texture, creating a powerful yet refined experience. Crafted with minimal intervention to preserve its natural character, this wine boasts pure, fresh flavors and a lingering finish. Approachable now, it also has the potential for medium-term aging, showcasing the balance and finesse of an exceptional vintage.

Traditionally a cold climate grape, Australia has a strong reputation of taking on the challenge of growing this variety despite its climate struggles. Being located in the sunshine state this possesses more difficulties for us than colder states. Because of this we grow a beautifully fruit forward shiraz, due to the thinner skins. A beautiful example of its climate is giving us yummy plump notes of blackberries, plums & cherries.

Paying homage to our traditional variety, we have much joy in bringing you a single variety Merlot Rosé. A Rosé is a style of wine making, we take a red grape stripping it off the stems, seeds and skins to take advantage of the delicately light and f ruity flavours held in the flesh. Here we leave the skins on for a short period of time, as a grapes colour and tannins come f rom the skins. This is where we get our beautifully deep rosé colour whilst keeping the delicate notes of our off dry rosé.
